Ingredients
1 pint thick custard
4oz margarine/butter
4oz sugar
2 eggs
12 tablespoons (60g) coconut
Method
Grease pudding dish, pour custard in while still hot. Let it cool a little. Beat margarine and sugar to a cream, add beaten eggs and coconut. Spread evenly over custard and bake until nicely brown.
Moderate oven about 40 min (serves 4-5 people).
