Ingredients

Shortbread base

2 cups flour

½ cup icing sugar

200 g marge

Mix and bake together at 350℉ till light brown.

Filling

½ cup flour

Grated rind of a lemon

½ cup lemon juice

3 (or 4) beaten eggs

1 cup sugar

½ tsp baking powder

icing sugar to dust


Method

Beat eggs, add sugar, lemon juice and rind.

Lightly beat in flour and baking powder.

Pour over cooked shortbread. Put back in cool oven +- 325℉ till set.

Sprinkle icing sugar.

Cut when cool.
