Ingredients

Base

½ pkt tennis biscuits – crushed mixed with

100 ml butter/marge (melted)

Filling

1 small tin condensed milk

100 ml cream lightly whipped

Rind of 1 lemon

Juice of 1 lemon and 25 ml lemon juice

1 beaten egg


Method

Grate lemon rind and squeeze juice. Place condensed milk, lemon juice, and rind in a bowl and mix with a whisk. Add beaten egg and fold in lightly whipped cream.

Pour into dish and leave to set.
