Ingredients

1 oz cornflour

¾ oz butter/marge

4 oz sugar

2 eggs

½ pint water

1 or 2 lemons


Method

Boil together water, butter, grated peel 1 lemon. Mix cornflour and sugar in a bowl and pour in hot liquid, whisking well. Return to pan and whisk in 2 egg yolks. Bring slowly to the boil and cook gently for 10 min still whisking. Add the juice of the lemons to the pan and fold in stiffly whisked egg whites.

Place in dish and chill.
